Here's my guide to hit and dam and what hand items to use.
Level 99-Il san: You want as much dam as possible. Because you're not going to be able to hit back and the sides much you're gonna want to put out as much damage as possible. Also, most mages don't set or have time to set because you kill so fast so it's not necessary for you to hit creates behind you or on the sides of you. When you hunt you want to be using NLAs and a magical dust. If you can't afford NLAs get a metal orb and a Qi shard.
Il san-ee san: At this point you're gonna begin needing hit. Once you hit sheep2 you don't kill things nearly as fast as you did in previous caves. Also, mages begin setting so it's important for you to be able to hit all the creatues around you, not just the ones in front. WLAs are still a great hand item here but you may be better off with something that adds dam as well as hit such as a claw, heart, or spirit mask.
Ee san-Sam san: Now you need a lot of hit as well as dam. It takes many swings to kill creatures and the mages are almost all exceptional settters. Because of this, you're going to need a lot more hit then you previously did. At this level it would be best to forget about luck amulets. They do make you hit hard but you're going to find yourself bringing in a lot less experience than a fighter with claws, hearts, and spirit masks.
In conclusion, dam is the only important factor early on but eventually you're going to NEED the hit.
